Mango Barbecue Sauce
*Ingredients*
* 1 tbsp extra virgin olive oil
* 1 medium onion, sliced into ½-inch thick rings
* 1 medium red bell pepper, cut into large planks
* 2 fresh jalapeno peppers, cut in half lengthwise, stemmed and seeded
* 1 tsp salt
* 1/3 cup red-wine vinegar
* 3 tbsp molasses
* 2 tbsp Worcestershire sauce
* 1/4 tsp ground allspice
* 1 medium mango (about 1 pound), cut into chunks
*Directions*
# Prepare a barbecue grill to medium heat. Brush onion, red bell pepper and jalapenos with oil on both sides and sprinkle salt on both sides. Grill vegetables two to three minutes per side, until grill marked and slightly softened. Remove from grill and tent lightly with foil.
# Bring vinegar, molasses, Worcestershire sauce and allspice to a boil. Add grilled vegetables and simmer for four minutes to blend flavors.
# Pour mixture into a blender. Add mango and blend until smooth. Add more salt if needed.
